Beef Liver Mix Meatballs (Egg-Free)

One of the easiest ways to incorporate beef liver into an existing diet is to swap out your regular beef mince for a beef liver mince mix.  And a great way to further disguise the flavour while your taste buds adapt is to make simple meatballs.  These are a hit with the Carni-Kids too!  Being freezer-friendly, they are perfect for making in bulk.

SIMPLE & EASY MEAT-ONLY BEEF LIVER MEATBALLS

500g beef liver mince mix (80% beef mince : 20% beef liver mince)
500g pork mince
500g your choice of plain beef mince or chicken mince
4 rashers of bacon
<1 teaspoon duck fat

  1. Dice the bacon according to the size of meatball you want to make. Dice finely if you want bite-sized meatballs for snacking.
  2. Divide each of the minces into half portions and place half of each in mixing bowl. Combine thoroughly using your hands.
  3. If required, ‘oil’ the air fryer tray with a small amount of duck fat (note: the bacon helps to prevent sticking so minimal duck fat required). Pre-heat the air fryer for 5 minutes at 180 degC.
  4. Add half of the bacon to the mixing bowl and combine.
  5. Form the meatballs to the desired size. If you’re short of time, go large. If you’ve got the time, bite sized meatballs make a great snack.
  6. If large meatballs: cook the first batch for 12 minutes at 180 degC, turn over and cook for a further 10 minutes. If small/ bite-sized meatballs: cook until the core temperature is around 75 degC.
  7. While the first batch is cooking, repeat with the remaining meat.

Makes about 14 large meatballs.  Perfect for cooking a bulk batch and freezing.
Substitute different meats for a different taste.  Note: the beef liver mix is a ‘wetter’ mince.  If removing, add an egg to compensate.
