Crumbed Chicken V-Wings

This simple 3 ingredient carnivore crumbed chicken (aka carnivore KFC) is absolutely delicious!  You can use chicken v-wings (pictured) or chicken wings for a more bite sized finger-food snack.  The v-wings are a great dinner option if you’re having non-carnivore guests and they are especially a hit with the kids.

1kg free-range chicken v-wings (fills 1 large air fryer tray)
2 generous handfuls of homemade or good quality pork rinds <add Shop link>
1 free-range egg

  1. Place your pork crackle in a blender to produce crumbs.  Alternatively, crush to size using a rolling pin.  Place half of the pork crackle crumbs on a dinner plate, spread out.
  2. Preheat air fryer for 5 minutes at 180degC.
  3. Crack an egg in a bowl and whisk using a fork.
  4. Dip your chicken v-wings into the egg to coat all sides, then into the pork crackle crumbs.  Place into the air fryer facing up. 
  5. When crumbs are used, respread the remaining half on the plate and continue.  This quantity coated 7 v-wings and filled a large 10L air fryer tray.
  6. Cook in air fryer for 8 minutes at 180 degC.
  7. Turn over and cook for a further 8 minutes on the reverse side at 180 degC.
  8. Turn a final time and cook for 2 minutes at 180 degC for the final crisp up.
  9. Plate up, allow to cool slightly and enjoy!
