Pork Crackle (Homemade)

Homemade pork crackle (aka carnivore popcorn) makes a fantastic substitute for a movie night snack, if you’re accustomed to snacking during a flick.  It’s a great addition to road trip and picnic basket foods, as well as being a nice lunch box treat.

400-500g pork rind (1 oven tray)
2 tablespoons duck fat
4 teaspoons+ (to your liking) salt (Celtic Grey Sea Salt or Magnesium Enriched Natural Lake Salt)

  1. Lay out your pork rind on a cutting board and get oven trays ready (no need for ‘oiling’ them).
  2. Preheat oven to 200 degC (fan forced).
  3. Carefully score your pork rind on the diagonal in both directions or cut to size using kitchen scissors.
  4. Using your hands rub duck fat into the skin, sprinkle on sea salt and rub again.
  5. Cook for around 50 minutes and try not to open your oven during cooking.  Wait for it to surface bubble and ‘bend back’.  Pull out of the oven and leave to cool.
  6. Sandwich a sheet of pork crackle between paper towel and crush using your palms to create crackle shards (pictured).
