Salmon & Egg Pancake (DF)

A simple and easy 3 ingredient Salmon and Egg Pancake (DF).  Make one large quick and easy pancake if you’re in a rush, or get creative for the kids and make pikelets or cut-outs!  See also our Sardine and Egg Pancake (DF) and our Pate Flat Bread (DF).

SIMPLE & EASY 3+ INGREDIENT SALMON & EGG PANCAKE (DAIRY-FREE)

4 free range eggs
150g of cooked salmon
1 tablespoon of homemade bone broth (heaped) or 1 teaspoon of bone broth concentrate (heaped)
Your choice of duck fat (or butter) for frying

  1. Crack 4 eggs into the blender.
  2. Add salmon.
  3. Add the bone broth to the mix.
  4. Blend on high speed until smooth and a little frothy.
  5. Heat duck fat in fry pan on medium heat and pour in mixture to your preference.

This mix makes one large pancake which shrinks/settles as it cools.

For a thinner pancake, add half the mixture and make two. For fun, make pikelets like the stars pictured.
