Savoury Mini-Donuts (DF)

A 5 ingredient dairy-free savoury mini-donut.  These are a fun novelty to make with your Carni-Kids and make great snacks and lunch box treats.  You can also use the mixture to pour into a waffle mould, if you prefer to keep it simple.  Carni-snacks like this keep it interesting for the kids and beginners that are transitioning in.

1+ tablespoon duck fat
1 generous handful of homemade or good quality pork rinds
2 tablespoons of finely diced, cooked bacon
1/3 teaspoon baking powder
1 egg

  1. Melt duck fat in a bowl.
  2. Blend the pork rinds until fine or crush using a rolling pin (makes 1/2 cup) and add to bowl.
  3. Add bacon to bowl.
  4. Add the baking powder and egg and mix well.
  5. Leave mixture to sit and thicken for 5 minutes while you grease the donut moulds with a small amount of duck fat and then pre-heat it until the green light comes on.
  6. Portion the mixture into the mould and cook until light goes off (about 8 minutes).

Makes 6-7 mini-donuts.

If you tolerate a sweetener, you can add 1/2 teaspoon of 100% maple syrup.
